El Matasano (Guatemala)


Velma Ordoñez is a second-generation coffee producer living in the town of San Antonio Huista in the Huehuetenango Region. During the harvest Velma makes sure that only the ripest cherries are picked, which results in total of three to four picking passes on the farm. Cherries are depulped the same day of the picking and fermented in water for 36 hours.
