Finca Chambakú is the new project of the Restrepo family. It is a 12-hectare farm located in Villamaría, Caldas. Juan Felipe, Q Processor, and partner of the farm, is in charge and the great architect of the protocols and the process of benefit on the farm behind the processed coffees. A lot selection process is carried out giving priority to the location of the coffee tree within the farm, seeking that it meets the temperature and humidity requirements for the development of sugars. After the exhaustive harvest, a float process is carried out to eliminate the less dense cherries and aerobic fermentation begins in 16-hour tanks using an inoculum prepared with the fermentations of the previous harvests of the farm.
The coffee mass is transferred to the greenhouse and put to dry in beds for 2 days to drain much of the water and a last phase of juice exchange. Finally, the drying process is finished with a silo airing process for 2 days.
